Pecan Crusted Pork Chops with Maple~Bourbon Cream Sauce

Sweet and savory with a nice cream finish.


8 semi-thin, pork medallions (boneless thin cut pork chops)
1/2 cup pecans
1/4 cup flaxseed meal
1 tsp. rubbed sage
1/2 tsp. salt
1 recipe of Maple ~ Bourbon Cream Sauce


Preheat oven to 350 degrees.

Place pecans, flaxseed meal, sage and salt in food processor, chop until course ground.

Spray baking sheet with non stick spray. Apply pecan mixture to both sides of pork, pressing into meat. Place on baking sheet and place in oven. Bake for 45 minutes to an hour.

To serve, arrange pork on plate and spoon sauce over top.

Yields 4 Servings

Serving Size = 2 pork medallions with 1/4 cup sauce
