1 lb. ground beef
2 cloves garlic, minced
1/2 tsp. ground ginger
1/2 tsp. ground black pepper
1/2 cup soy sauce
1/2 cup dry cooking sherry
1/4 cup powdered artificial sweetener, such as Equal
In a large bowl combine meat with garlic, ginger and pepper, mix until well combined. In a large pan over medium-high heat, add meatballs, brown all the way around. Add remaining ingredients, cover and reduce to simmer and cook 20 minutes. Remove lid and increase heat to boil off the excess liquid and render a thick sauce. Serve over stir fry vegetables or cauliflower rice for a meal or serve alone as an appetizer.
